As a Chef that worked for a major amusement park with a very popular mouse, I have cooked tons of meals for those with food allergies, medical conditions, and sensitivity.
We actually became very well known for our ability to create and accommodate almost any type of food diet, restrictions, or allergies.
I learned about the world of Gluten Free eating way before it became a trend in today’s dieting habits.
There are 7 known food allergies in the culinary world. They are classified as allergies because they’re potentially life threatening. Everything after that is classified as an intolerance and they can range in mild to sever.
The 7 Food Allergies are:
1. Egg 2. Dairy 3. Peanuts 4. Tree Nuts 5. Soy 6. Gluten 7. Seafood
In the beginning of my culinary career food allergies were few and far between. We maybe had one allergy guest a meal period, if that. Food allergies weren’t all that common and the biggest one was peanuts.
But over the last 12 years there has been a MAJOR increase in allergies. It seem to happen almost overnight. One day I had maybe 3-4 special diet/allergy requests on a dinner shift, that ran from 5pm -10pm, to having over 25 special food diets requests.
In my kitchen we had 2 people scheduled just to assist with food allergies or special diet requests every day. And the shocking fact is that the number of those getting food allergies is increasing!
There were many guest that I talked to that would say, “I never had food allergies before but as I got older I began to develop them.”
